Easy Overnight Oats:
1/4 cup rolled oats (organic is best)
1/4 cup skim or vinalla almond milk (no sugar)
1/4 plain non-fat Greek yogurt (optional for extra protein)
1-2 tablespoons of chia seeds
1 table spoon of honey, maple syrup, agave, or sweetener of choice
1/4-1/2 teaspoon of vanilla
1-2 tablespoons chocolate chips (optional)
Mix all ingredients together in a bowl and set in fridge overnight to soak. Spoon mixture over fruit and top with fresh or dried berries, nuts, coconut shavings, seeds, etc!
Note: overnight oat recipes are basically equal parts oats to milk, so if you want to make more or less, just make sure the ratio to milk, oats, and optional yogurt are 1:1:1. Also, for extra protein, mix in protein powder or nut butter! I’ve done a tablespoon of PB2 with 1/2 tablespoon of raw cocoa powder in addition to the above ingredients and it is delicious! It tastes like a granola or protein bar.
